Black-Eyed Peas and Shrimp Salad
Preparation Time: 30 minutes
Cooking Time: 10 minutes
Perfect Partner: Hot Mint Tea
Ingredients
- 16 –ounce package frozen black eyed peas
- ¼ pound cooked shrimp. peeled and deveined
- ½ cup sliced celery
- ½ cup diced red bell pepper
- 6 green onions, sliced
- ¼ cup vegetable oil
- 2 tablespoons balsamic vinegar
- 1 clove garlic, minced
Salt and pepper to taste
1 small Bibb lettuce, separated into leaves
Cook peas as directed on package; drain and cool. Gently toss peas, shrimp, celery, red bell pepper and green onions together in medium bowl. Combine oil, vinegar, garlic, salt and pepper. Pour over shrimp mixture and toss to coat. Chill. Serve on lettuce leaves. Garnish with lemons and parsley if desired.
