Sweet Potato Pie
Preparation Time: 25 Minutes
Cooking Time: 50-60 Minutes
Ingredients
- 3 medium sweet potatoes
- 2 deep dish pie Shells
- 1 cup white sugar
- 1 can sweetened condensed milk
- 3 eggs
- 1 teaspoon baking powder
- 1 stick butter
- 1 tablespoons nutmeg (to taste)
- 1 teaspoon vanilla extract
Wash the potatoes, and boil them until soft enough to mash.
While potatoes are still hot, mix in your butter, sweetened condensed milk, sugar and all other ingredients except the eggs.
After mixing the aforementioned. Add your eggs. (Remember, it will have sort of a course texture but that is fine for sweet potato pies; the texture is not quite as smooth as mashed potatoes.)
Finally take ingredients and spoon into your pie shells.
Pre-heat your oven at 350 degrees. Bake pies about 50-60 minutes...you should be able to push on the pies lightly and they "should" spring back up.
